The rebuttal has to come from what actually happened on the contract - and it is hard to reconstruct months of performance from memory under a two-week clock. You record verifiable, measurable performance facts as the work happens, so when a rating you disagree with lands, you answer it from your own dated record - not from memory. Beyond the defense PDF you choose to generate, the app has no built-in export, import, or backup. Your data is included in iOS Backups (iCloud Backup or Finder) when those are enabled. If you delete Perfilo without an iOS Backup available, your records and photos cannot be recovered.
